Tiling Walls

Tiling kitchen walls over an "L" shaped countertop and creating a backsplash, but one wall is uneven.?

I am tiling my kitchen walls above and "L" shaped counter but the sink wall is uneven. The deepest point of the wall from the countertop is around 7/8" thick. I would like to use a Travertine tile (12"x12") 3/8" thick with mesh backing to be applied with mastic but I am worried about the thickness of the adhesive to the wall used to hold the tiles in place. I have thought of many ways around this but I am no expert so am requesting ideas all may suggest.

I don t under stand what you want to do.. Do you want to build out the tile to fill the uneven dry wall to the counter?And I ve never seen or heard of a 12" tile with a mesh backing. Do you mean a 1 inch or 1/2"? on a mesh netting? If you have a dip in the dry wall or the "L" shape isn t a 90 degree and the counter isn t up against the wall? There are ways to cure either of these. Let me know.
