Granite countertops and tile floor installation?

I'm having a local granite and tile floor shop redo my kitchen counter and floor tiling in the kitchen and surrounding areas. They tell me that the total installation will take 1 day. It is 514 m² in tile. They say they want to put the first card, then install the granite countertop. Does this make sense? I am a bit concerned about the weight of granite that moves around on the tile before the tile has cured. Is this common practice?
